An assortment of our better cuts of beed and represents roughly 1/16 of the carcass or roughly 40 pounds of our homegrown beef, giving you a variety of cuts for the grill, oven, crock pot and more for your cooking and consuming pleasure. It includes 4 ribeye steaks, 4 t-bone steaks, 2 sizable sirloins, 1 hanger steak, 2 Denver steaks, 1 beef roast, 2 pounds of stew beef, 2 twin packs of our short ribs, 10 pounds of ground beef, 8 pre-made patties, 1 pound of hot dogs and 1 pound of beef brats. That should fill you up and fuel you up with lots of protein and lots of menu options.
Our beef is raised on pastures when they can and reside along our dairy cows when they can’t. They are finished consuming a blend of homegrown forages and grain supplement. Being co-mingled with our dairy herd reduces anxiety when being moved and handled for harvest. Our animals are never given added growth hormones and are considered “all natural”. We ideally harvest our beef animals under two years of age, with the majority averaging 18-20 months old. This helps ensure a tender and consistent product. We utilize a local beef processor who are skilled in cutting beef and are inspected by USDA. By purchasing beef by the side, you can have your beef custom cut to your liking. All beef is aged for 7-10 days to optimize tenderness and flavor. Our beef average around 800-850 pounds at time of harvest. Our price includes the price of the animal, as well as all harvesting and processing fees. A half a beef will cost around $2,000.
